Also known as Sunchoke. A root crop in the sunflower family that can be eaten raw, cooked, or pickled. Flowers in late summer. The plant has a competitive, spreading habit. Tubers can be harvested in late Fall or early Spring. Leaves and stems make an excellent animal feed source, and harvesting biomass helps reduce unwanted spreading of the crop.
